Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, whisk together flour, baking powder, baking soda, and salt.
In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and honey.
Alternate adding the dry ingredients and buttermilk to the wet mixture, mixing until just combined.
Gently fold in diced peaches.
Fill cupcake liners 2/3 full and bake for 18-20 minutes until a toothpick comes out clean.
Let cupcakes cool completely before frosting.
For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in honey and vanilla.
Frost cooled cupcakes and garnish with peach slices or a drizzle of honey.
Notes
For a lighter frosting, reduce the powdered sugar and add a splash of lemon juice for extra tang.
