Ingredients
  

Cupcake Batter

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter softened
  • 3/4 cup sugar granulated
  • 2 eggs room temperature
  • 1 tsp vanilla extract
  • 1/4 cup honey pure
  • 1/2 cup buttermilk
  • 1 cup peaches diced, fresh or frozen

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1/2 cup butter softened
  • 2 cups powdered sugar sifted
  • 2 tbsp honey
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and honey.
  • Alternate adding the dry ingredients and buttermilk to the wet mixture, mixing until just combined.
  • Gently fold in diced peaches.
  • Fill cupcake liners 2/3 full and bake for 18-20 minutes until a toothpick comes out clean.
  • Let cupcakes cool completely before frosting.
  • For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in honey and vanilla.
  • Frost cooled cupcakes and garnish with peach slices or a drizzle of honey.

Notes

For a lighter frosting, reduce the powdered sugar and add a splash of lemon juice for extra tang.
