Tater Tot Breakfast Bowl with Sausage Gravy

Ingredients
Breakfast Bowl Base
- 4 cups frozen tater tots or homemade tater tots
- 4 large eggs cooked to your preference
- 1 cup shredded cheddar cheese or cheese of choice
Sausage Gravy
- 1 lb breakfast sausage pork or turkey
- 2 tbsp flour for thickening the gravy
- 2 cups milk whole or 2% preferred
- 1/2 tsp salt or to taste
- 1/2 tsp black pepper freshly ground, or to taste
Optional Toppings
- 1/4 cup diced green onions for garnish
- 1/4 cup cooked bacon crumbles for extra crunch
- 1/4 cup diced bell peppers for added flavor
Instructions
- Preheat the oven to 425°F (220°C). Arrange tater tots on a baking sheet and bake for 20-25 minutes, or until golden and crispy.
- While the tater tots bake, cook the breakfast sausage in a large skillet over medium heat until fully browned. Break up the sausage as it cooks.
- Sprinkle flour over the cooked sausage and stir well to coat the meat.
- Slowly pour in the milk while stirring continuously to avoid lumps. Let the gravy simmer for about 5 minutes, or until thickened. Season with salt and pepper.
- Cook the eggs to your desired doneness (scrambled, fried, or poached).
- Assemble the breakfast bowls: Place a portion of crispy tater tots in a bowl, top with sausage gravy, add eggs, and sprinkle shredded cheese on top.
- Garnish with green onions, bacon crumbles, or bell peppers if desired. Serve hot and enjoy!
Notes
For extra crispy tater tots, bake them a few minutes longer than the package suggests or use an air fryer.
