  • 1/2 cup Whole Milk

  • 4 Large Eggs at room temperature, lightly beaten
For the Spiced Pumpkin Cream Filling
  • 1 1/2 cups Heavy Whipping Cream very cold
  • 8 oz Mascarpone Cheese cold
  • 1 cup Pumpkin Purée not pumpkin pie filling
  • 3/4 cup Powdered Sugar sifted
  • 1 1/2 tsp Pumpkin Pie Spice
  • 1 tsp Vanilla Extract

Method
 

Step 1: Make the Choux Pastry

  • Transfer the dough to the bowl of a stand mixer fitted with the paddle attachment (or a large mixing bowl if using a hand mixer). Beat on low speed for 2-3 minutes to cool the dough slightly.
  • With the mixer on low, add the lightly beaten eggs one at a time, waiting until each egg is fully incorporated before adding the next. The final dough should be smooth, thick, and glossy, and form a 'V' shape when you lift the paddle.
  • Transfer the choux dough to a piping bag fitted with a large round tip (about 1/2 inch). Pipe 1.5-inch mounds onto the prepared baking sheets, leaving about 2 inches of space between them. Use a wet fingertip to gently smooth down any peaks on top.
  • Bake at 400°F (200°C) for 15 minutes. Then, without opening the oven door, reduce the temperature to 350°F (175°C) and bake for another 20-25 minutes, or until the shells are a deep golden brown, firm, and sound hollow when tapped.
  • Turn off the oven. Use the handle of a wooden spoon to prop the oven door slightly ajar. Let the shells dry in the cooling oven for 10 minutes.
