  • 1/4 tsp Ground nutmeg
  • 1/8 tsp Ground cloves
  • 1/2 cup Unsalted butter softened to room temperature
  • 1/2 cup Light brown sugar packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs room temperature
  • 1 tsp Vanilla extract
  • 1 cup Pumpkin puree not pumpkin pie filling
  • 1/2 cup Sour cream or full-fat Greek yogurt room temperature

Method
 

Prepare the Streusel and Pan

  • Using a pastry blender, two knives, or your fingertips, cut the 1/2 cup of cold, cubed butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining. Place the bowl in the refrigerator to keep cool while you prepare the cake batter.
Make the Pumpkin Cake Batter
  • In a large bowl, whisk together the dry ingredients for the cake: 2 cups all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.

  • Carefully spoon the remaining cake batter over the streusel layer and gently spread it to the edges. Sprinkle the remaining streusel topping evenly over the top.
  • Bake for 40-50 minutes, or until a wooden skewer or toothpick inserted into the center of the cake comes out clean or with a few moist crumbs attached. The top should be golden brown.
