There’s a particular chill in the air that always makes me crave one thing: a deep, comforting bowl of soup. For me, nothing beats the aroma of a truly rich and creamy chicken soup simmering on the stove. It’s more than just a meal; it’s a feeling of warmth from the inside out. While I adore vibrant flavors like those in my Lemon Rice Soup, this hearty recipe is the one I turn to for pure, soulful comfort every single time.

What Makes This creamy chicken soup So Special?

What I adore most about this recipe is how it delivers such a luxurious, from-scratch flavor in under an hour. With just 15 minutes of prep and 35 minutes of cooking, I can create a deeply satisfying meal. It’s all about using simple, quality ingredients—like real butter, heavy cream, and aromatic vegetables—to build a soup that tastes like it has been simmering for hours. It’s my go-to for a comforting weeknight dinner that feels truly special.

What Goes Into My Favorite creamy chicken soup

For this soup, I insist on two things: whole milk and heavy cream for an unbeatable velvety texture, and wide egg noodles to capture all that delicious broth. Don’t skip the fresh parsley at the end! If you enjoy rich, comforting meals, you’ll love my Beef Short Rib Soup, too.

Ingredients

For the Soup
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 large yellow onion diced
  • 2 medium carrots peeled and sliced
  • 2 stalks celery sliced
  • 3 cloves garlic minced
  • 1/3 cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 cup whole milk room temperature is best
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 1 bay leaf
  • 3 cups shredded cooked chicken from a rotisserie chicken or poached breasts
  • 2 cups wide egg noodles uncooked
  • 1/4 cup fresh parsley chopped, plus more for garnish
  • Salt and freshly ground black pepper to taste

Equipment

  • Large pot or Dutch oven
  • Whisk
  • Cutting Board
  • Knife

Method

Sauté Vegetables
  • Melt butter and olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté, stirring occasionally, until the vegetables have softened, about 6-8 minutes.
  • Add the minced garlic and cook for one more minute until fragrant, being careful not to burn it.
Create the Creamy Base
  • Sprinkle the all-purpose flour over the cooked vegetables. Stir constantly for 1-2 minutes to cook out the raw flour taste and create a paste (this is a roux).
  • Gradually pour in the chicken broth while whisking continuously. Adding the broth slowly and whisking will prevent any lumps from forming. Once all the broth is incorporated, stir in the dried thyme and add the bay leaf.
Simmer and Combine
  • Increase the heat to bring the soup to a gentle simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for 15 minutes. This allows the flavors to meld and the vegetables to become fully tender.
  • Stir in the whole milk, heavy cream, shredded chicken, and uncooked egg noodles. Bring the soup back to a very gentle simmer over medium-low heat (do not let it boil rapidly, as this can cause the dairy to curdle). Cook, stirring occasionally, for 8-10 minutes, or until the noodles are cooked to your liking.
Finish and Serve
  • Remove the pot from the heat and discard the bay leaf. Stir in the chopped fresh parsley. Taste the soup and season generously with salt and pepper until the flavors are just right.
  • Ladle the creamy chicken soup into bowls and serve immediately, garnished with a bit of extra fresh parsley if desired.

Notes

Chicken: Using a store-bought rotisserie chicken is a great time-saver. You can also poach 2 boneless, skinless chicken breasts in salted water until cooked through, then shred them. Storage: Store leftover soup in an airtight container in the refrigerator for up to 3 days. The noodles will absorb more liquid over time, so you may need to add a splash of broth or milk when reheating. Freezing: This soup doesn't freeze well with noodles and dairy. If you plan to freeze it, make the soup base without them, freeze, and add them in when reheating.

How I Make creamy chicken soup

I always start by sautéing the onion, carrots, and celery in butter and olive oil until they’re soft and fragrant—this builds the foundation of flavor. Then, I whisk in the flour to create a roux before slowly adding the broth and milk. Once it’s simmering with thyme and a bay leaf, I add the chicken and noodles. Finishing with heavy cream and fresh parsley makes this soup absolutely perfect. It’s a simple, soothing process I truly enjoy.

My Tips for the Perfect Outcome

  • Shred, Don’t Cube: I find that shredded rotisserie chicken has the best texture and absorbs the broth beautifully.
  • Temper the Cream: To prevent curdling, I whisk a little of the hot broth into the cold cream before adding it to the pot.
  • Don’t Overcook Noodles: Add the egg noodles near the end of cooking so they remain perfectly tender and don’t become mushy.

How I Serve and Store This Dish

My favorite way to serve this soup is in deep bowls with a sprinkle of extra fresh parsley and a side of crusty, buttered bread for dipping. For leftovers, I store the soup in an airtight container in the refrigerator for up to three days. If possible, I recommend storing the noodles separately and adding them back in when reheating to keep them from getting too soft in the creamy chicken soup.

Can I use something other than heavy cream?

Absolutely. While heavy cream gives the most luxurious result, you can use half-and-half for a slightly lighter version. For a dairy-free alternative, full-fat canned coconut milk is a great substitute. Just be sure to use the thick cream from the top of the can to ensure your creamy chicken soup is still rich.

What’s the best way to get shredded chicken?

My go-to shortcut is using a store-bought rotisserie chicken. It’s a huge time-saver and the meat is already seasoned and tender. If you prefer to cook your own, you can easily poach two boneless, skinless chicken breasts in water or broth until they are cooked through, then shred them with two forks.

Can I add other vegetables to this creamy chicken soup?

Of course! This recipe is very adaptable. I sometimes add frozen peas or corn during the last few minutes of simmering for a pop of sweetness and color. Sliced mushrooms sautéed with the other vegetables or some chopped spinach stirred in at the end would also be delicious additions to this creamy chicken soup.

How do I prevent the soup from being too thin?

If your soup isn’t as thick as you’d like, you can create a small slurry by whisking one tablespoon of cornstarch with two tablespoons of cold water. Slowly stir the slurry into the simmering soup and let it cook for another minute or two until it has thickened to your desired consistency.

This recipe is one of my all-time favorites, and I’m so excited to share it with you. I hope this hearty, creamy soup brings as much comfort and happiness to your kitchen as it does to mine. If you give it a try, I would love to hear how it turned out in the comments below!
